cave breakthrough

After more than a year of digging caves for the new Deerfield Ranch Winery, Bacchus Cave Co. finally connect the two portals. The “breakthrough” is a momentous occasion and PJ was there for the event. “The caves have a wonderful feel. It’s cool, calm and quiet. Robert says that such an environment will make better wine and I’m sure he is right,”says PJ. Walker and PJ spend almost as much time in the caves as the cave diggers.

When completed, the caves will hold over 2,000 barrels of aging wine. The 20,000 square feet of caves, deep in the mountain beneath the winery site, are an integral part of the new 45,000 case Deerfield Ranch Winery being constructed on Highway 12 in Kenwood. The Rexes expect to make the 2004 vintage wines in the caves and in an adjacent barn to be constructed. The main winery building, which includes a grand tasting room, art gallery, dining room and decks with sweeping views of Sonoma Valley and the Kenwood Marsh, is expected to be completed by the spring of 2005.

“The caves are shaped like a wine glass with curved barrel aging corridors intersecting at a grand vaulted room. The Grand Room contains a cellar for the Deerfield Ranch Library wines and has an alcove dedicated to the Indian Artifacts collected during the recent archeological dig.” says Martin Rex, General Manager.

Everyone at Deerfield feels fortunate to be working with Bacchus Caves on this project. David Provost, owner of Bacchus Caves and a partner in the Deerfield Ranch Winery, has done an outstanding job of staying on budget and on schedule. Robert and Michael are looking forward to making wine in cave this coming harvest. The caves are scheduled to be completed by spring.
