The 2008 Spring Wine
Club selection includes two wines guaranteed to turn a dinner
party into an “Italian Affair.” We start in the kitchen
with the 2003 Sangiovese paired with simple appetizers. The 2002 Super
T-Rex is paired with the main course. While we may not be able to send
you twinkling candles and an Italian tenor, we can send you the very
best Tuscan style wines, and include a couple of recipes on our web
site to help you create your own “Italian Affair.”

2003 Sangiovese, North
Coast - Two bottles
94% Sangiovese,
6% Cabernet. “An Italian grape meets California know-how.”
We’ve sourced this lovely, strawberry flavored grape, from three
growers, in diverse appellations, with whom we’ve worked for many
years. When fully vine-ripened, Sangiovese loses its aggressive acidity
in favor of lushness concentrated in a cresting wave at the front of
your palate. Our fermentation techniques produce soft tannins and low
acid. Long barrel aging makes the wine mellow. Chilled on a warm summer
day, it’s a perfect companion to Sauvignon Blanc or Chardonnay
to start.
2002
Super T-Rex, Tuscan Style, - Two bottles
71% Sangiovese,15% Cabernet
Franc, 10% Cabernet, 4% Dolcetto. “A redhead in a Ferrari on a
California Super Highway.” Super T-Rex is a Meritage style wine
based on Sangiovese. It has the forward fruitiness and lovely characteristics
of a Sangiovese with added depth and structure. The winemaking techniques
are gentle and meticulous, resulting in a wine with a brilliant hue,
full expression of the fruit flavors, well-integrated oak and layered
complexity. Aged for almost 3 years in the barrel and 3 years in the
bottle, flavor fills every corner of the palate, lingering into a long
finish.
2006
Sauvignon Blanc, Sonoma County - Two bottles
“This
SB has unrivaled complexity, exceptional depth and a long finish; It’s
bright and crisp, yet full and complex.” Perfectly vine-ripened
grapes were hand sorted and whole-cluster cold pressed. Fermentation,
which took five months, started in stainless and finished in our cool
cave in neutral oak barrels. This produced generous amounts of glycerin,
which contributes to the mouth feel. Our SB has a new ZORK closure.
Perfect for wine enjoyed in its youth. Zorks are made from surgical
quality materials, seal completely and can be removed easily. Simply
peal off the band and pop the Zork.
2004
Merlot Cuvée – New Release
Best

Merlot 75%, Cabernet 11%, Malbec 8%, Sangiovese 6%
Cuvée means wine blend. Good winemaking is like good cooking.
What makes a reduction sauce so delicious is the combination of flavors,
the layered sensations. This is the essence of Merlot Cuvée.
The femininity of the Merlot is emboldened by the Cabernet. The Malbec
gives flavor low on the palate and the Sangiovese elevates floral tones
to heights Merlot alone can never achieve on its own. This is our second
vintage of Merlot Cuvée. The ’04 is even richer than the
’03 with more depth and structure.
2003
Ladi’s Cuvée, Ladi’s Vineyards, Sonoma County
– Two bottles
This wine
is a sensuous blend of Cabernet, Merlot, and Syrah that reaches every
corner of your palate. The Cabernet forms the backbone, front to back.
The Merlot lifts the sensations up and forward. The Syrah takes flavor
to the back lower regions of your palate adding a blackberry and spice
taste. The balance is perfect with no gaps or holes. The tannins are
integrated, adding complexity without aggression; its lush fullness
draws you back for another sip. Ladi Cuvée is a tribute to Ladi
Danielik for his excellence in viticulture.
2002
Syrah, Artists Series, Ashton Vineyards, Sonoma Valley
This is
our first Syrah from Steve Ashton’s organically farmed vineyard
in Glen Ellen. It’s a cooler
terroir than the familiar Ladi’s Vineyard, producing a spicier
Syrah that starts high on the palate with layered complexity that drifts
lower as it finishes. This Syrah cries out for a meal from the grill.
We’ve adorned the bottle with a rare Artist Series label of the
view of Sonoma Mountain from the Deerfield veranda by local artist,
Fred Parker. Both the artist and the winemaker signed each bottle. We
made 600 bottles of this wine exclusively for our wine club.

Vineyard Meritage. We aged this Meritage in specially selected French

Cabernet Franc 8%, Malbec 7%, Merlot 5%, Petit Verdot 5%
When we talk about wine we talk about where we taste it on our palate
in addition to what it tastes like. Each grape flavor focuses on a particular
region of the palate, creating a three dimensional experience. A good
blend will reach every corner of the palate. We blended a full Cabernet
and then rounded the flavor by the adding the traditional Bordeaux blenders
giving making this Cabernet more approachable than most.
